Valentine’s Recipe: Bailey’s Chocolate Truffles

Ingredients

  • 250g dark chocolate
  • 250g milk chocolate
  • 250g cream
  • 166 ml Baileys Irish cream
  • Dipping chocolate
  • 250g milk chocolate
  • Cocoa powder (sifted onto a plate)

Method

  1. Begin by heating the cream until just simmering. Meanwhile, in a bowl, pour the hot cream over a mixture of finely chopped dark and milk chocolate. Allow the chocolate to melt into a velvety consistency.
  2. Transfer the chocolate mixture into a blender and blend until it transforms into a smooth emulsion. Introduce the Baileys into the blend, continuing to mix until the texture is consistently smooth.
  3. Pour the mixture into a silicone truffle mould, and place in the fridge to cool.
  4. While the truffle mixture is chilling, melt the milk chocolate. Ensure it reaches a smooth state without becoming overly hot.
  5. Once the truffles are cool and firm, dip each truffle ball on a toothpick into the melted milk chocolate, creating a luscious coating.
  6. Allow the excess chocolate to drip off by placing the coated truffles on a cooling rack. Once complete, transfer them to the fridge to solidify.
  7. Finish off by rolling each truffle ball in cocoa powder until evenly coated.
